The “sous vide” method

“Sous vide” is a method of cooking by placing the foods into sealed plastic bags and then cooking them at low temperatures for a long period of time. Some chefs claim it retains the real flavor of the food, others don’t think it’s a good idea at all. Chef and owner Humberto Campos Jr. at Lorena’s in Maplewood takes us through the process.
